Crockpot chuck roast or brisket

Ingredients
- 1 chuck roast or brisket (3–4 lb)
- 1–1½ lb baby potatoes
- 16 oz baby carrots
- 1 onion, sliced
- 2 1/2 cups water
- 3 cloves garlic, minced
- Salt
- Black pepper
- Paprika
- 1 tsp dried thyme
- 2 tbsp soy sauce / coconut aminos - optional
Steps
- Optionally sear the chuck roast or brisket.
- Place veggies, then meat, then water and seasoning into crockpot.
- Cook on low 8-12 hrs
