Crockpot chuck roast or brisket

Ingredients

  • 1 chuck roast or brisket (3–4 lb)
  • 1–1½ lb baby potatoes
  • 16 oz baby carrots
  • 1 onion, sliced
  • 2 1/2 cups water
  • 3 cloves garlic, minced
  • Salt
  • Black pepper
  • Paprika
  • 1 tsp dried thyme
  • 2 tbsp soy sauce / coconut aminos - optional

Steps

  1. Optionally sear the chuck roast or brisket.
  2. Place veggies, then meat, then water and seasoning into crockpot.
  3. Cook on low 8-12 hrs

My Notes
